Ingredients

  • 2 tablespoons coconut oil refined or virgin
  • 2 plantains brown (overripe), peeled and cut in half lengthwise and across, or into thick round slices
  • 1/4 teaspoon kosher or sea salt

Instructions

  • Place oil in a pan over medium heat. Add plantain pieces. Cook for about 10 minutes, until soft and browned, stirring occasionally. Sprinkle with salt before serving. Enjoy!
