Fully-Loaded Slow Cooker Lentil Stew

Ingredients

  • 2 cups butternut squash chopped into 1-inch cubes
  • 2 cups carrots peeled and chopped
  • 2 cups celery chopped
  • 15 ounces chickpeas can
  • 1 1/2 cup brown lentils dry
  • 1 white onion chopped
  • 3 garlic cloves minced
  • 6 cups vegetable broth low-sodium
  • 1 15 ounces tomatoes with liquid see note
  • 1 teaspoon lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon cumin
  • 1/2 teaspoon crushed red pepper
  • 1 bay leaf
  • 8 ounces kale coarsely chopped

Instructions

  • Add all ingredients to the slow cooker except the kale.
  • Cover and cook on low for 6 to 8 hours, or high for 3 to 4 hours.
  • Before serving add the kale and recover for ten minutes, until the kale is wilted.

Notes

Whole or diced tomatoes can be used in the stew. If using whole tomatoes, mash them with a fork before adding to the recipe.
