Ingredients

  • 2 cups leeks chopped (yellow onion can be substituted)
  • 1 cup carrots diced small
  • 2 tablespoons ginger fresh, chopped
  • 4 cups broccoli cut into small florets
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon crushed red pepper
  • 2 garlic cloves minced
  • 3 cups vegetable broth

Instructions

  • Combine all ingredients in a slow cooker. Cook on high for 4 hours or on low for 8 hours. In batches, place the soup in a blender and blend until smooth. Serve hot.
