30-Minute Spicy Sausage Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 yellow onion diced
  • 3 garlic cloves minced
  • 1 cup carrots diced
  • 1/2 cup celery diced
  • 1 green bell pepper diced
  • 1 cup zucchini diced
  • 1 pound spicy Italian sausage
  • 1 teaspoon mixed Italian herbs
  • 1/2 teaspoon red chili flakes
  • 1/2 teaspoon ground black pepper
  • 13.5 ounces canned diced tomatoes
  • 5 cups low sodium chicken broth
  • 1 pound russet potatoes peeled and cut into 1/2" cubes
  • 4 cups kale chopped

Instructions

  • Heat olive oil in a large pot over medium heat
  • Add onion, garlic, carrots, celery, green bell pepper, and zucchini and saute for 3 minutes
  • Add sausage and seasoning and cook for about 5 minutes, breaking up the sausage as you stir
  • Add diced tomatoes, black pepper, chicken broth, potatoes, and kale
  • Bring to a simmer for 15 minutes or until potatoes are tender
