Cheesy Chicken and Broccoli Casserole

Ingredients

  • 3 cups chicken cooked, shredded
  • 3 cups broccoli cut in florets
  • 4 cups brown rice cooked
  • 10.5 ounces light cream of mushroom soup canned
  • 2 teaspoons curry powder
  • 1 cup low-fat cheddar cheese  shredded

Instructions

  • Preheat oven to 375 degrees.
  • Combine all of the ingredients except for ¼ cup of cheddar cheese in a bowl, mixing well.
  • Spread evenly into a greased 9 x 13 baking dish
  • Sprinkle the rest of the cheese over top, then cover with foil
  • Bake for 25 minutes, then uncover and bake for another 5 minutes.
  • Remove from the oven and let rest for about 5 minutes before serving
