Ingredients

  • 1 1/2 tablespoons butter, melted but not hot
  • 1 egg
  • 1/2 teaspoon pure vanilla extract
  • 3 tablespoons almond flour, super-fine
  • 2 tablespoons stevia
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon kosher salt

Add-Ins

  • peanut butter
  • cocoa powder
  • sugar-free chocolate chips
  • rainbow sprinkles
  • whipped cream

Instructions

  • Add all ingredients (except for the add-ins) into a microwave-safe mug and stir until well combined. Gently mix in your choice of add-ins.
  • Microwave on high for 45 to 60 seconds until the cake has risen.
