Blueberry Baked Oatmeal

This nutritious breakfast is a comforting and easy choice when you've got a lot of guests!

Ingredients

  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons coconut oil melted
  • 2 cups unsweetened almond milk
  • 2 cups rolled oats
  • 1/3 cup white whole wheat flour
  • 1 teaspoon ground cinnamon
  • 2 teaspoons baking powder
  • 1/3 teaspoon salt
  • 1/2 cup coconut sugar
  • 1 1/2 cups blueberries fresh or frozen
  • 1/3 cup pecans chopped

Instructions

  • Preheat oven to 350F. Spray a 2 quart baking dish with cooking spray.
  • In a medium bowl, whisk together the eggs, vanilla extract, coconut oil, and almond milk.
  • In a separate large bowl, whisk the rolled oats, flour, cinnamon, baking powder, salt and coconut sugar.
  • Pour the wet ingredients into the dry ingredients and mix well with a wooden spoon. Then stir in the blueberries.
  • Pour the mixture into the prepared dish. Top with pecans. Bake for 35-40 minutes.

Notes

You may have to bake the oatmeal a little longer if using frozen berries.
