Roasted Smashed Potatoes

A crispy and tasty side dish sure to please everyone!

  • 2 pounds baby potatoes washed
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon grated parmesan cheese (optional)


  • Preheat oven to 475. Boil the potatoes until soft. Drain.
  • Place the boiled and drained potatoes onto a large baking sheet. Using a heavy flat object (a bottom of a glass works great!) press down on each potato and lightly smash. Drizzle with olive oil, and sprinkle with salt, pepper, and parmesan cheese. Bake for about 15 to 20 minutes or until lightly browned.
