Roasted Lemon and Dill Cauliflower

Ingredients

  • 1 cauliflower head cut into florets, core discarded
  • 1 tablespoon olive oil
  • 1 tablespoon lemon zest (no white pith)
  • 1 tablespoon fresh dill finely chopped
  • 1 teaspoon sea salt

Instructions

  • Preheat oven to 400 degrees F.
  • Place cauliflower florets on a rimmed sheetpan.
  • Add olive oil, lemon zest, dill and salt. Toss to completely coat florets. Spread in a single layer on sheet pan.
  • Roast for 15 minutes, or until golden brown. Watch carefully, as oven cooking times may vary.
  • Remove from oven and serve immediately.
