Ingredients

  • 4 medium sweet potatoes scrubbed, peeled and cut into 1" cubes
  • 2 large navel oranges zested and juiced
  • 2 Tablespoons maple syrup
  • 1 Tablespoon fresh rosemary finely chopped
  • 1/2 teaspoon kosher or sea salt
  • 1/4 teaspoon ground black pepper

Instructions

  • Preheat oven to 375 degrees F.
  • Place all ingredients in an oven safe baking dish and toss together until well combined.
  • Cover baking dish with lid or foil and bake for 25-30 minutes, or until potatoes are tender. Stir occasionally to prevent maple syrup from burning.
