  • 2 pounds collard greens stems removed, leaves roughly chopped
  • 1/4 pound turkey ham chopped into 1" pieces
  • 2 teaspoons cajun seasoning
  • 1 yellow onion chopped fine
  • 3 cloves garlic chopped
  • 6 cups low sodium vegetable broth or stock
  • 1/4 cup maple syrup


  • Place all ingredients in a large pot over medium-high heat.
  • Bring to a boil, reduce heat and simmer for 30 minutes, until greens are tender.
