Loaded Greek Sweet Potato Fries

Ingredients

  • 2 sweet potatoes large, cut into french fry sized strips, peeled if desired
  • 2 teaspoons olive oil
  • Kosher salt to taste
  • ground black pepper to taste
  • 1/2 cup plain Greek yogurt
  • 1 garlic clove minced
  • 1/2 teaspoon lemon juice
  • 2 tablespoons cucumber grated
  • 1 teaspoon dried dill
  • 1/2 cup Roma tomato diced small
  • 1/4 cup red onion diced small
  • 1/4 cup fat-free feta cheese

Instructions

  • Preheat oven to 425. Spray a baking sheet with nonstick spray and set aside.
  • In a large bowl, combine the sweet potato, olive oil, salt, and pepper. Toss well to coat the potatoes in the oil. Spread in an even layer on the prepared baking sheet. Bake for 20 to 30 minutes, turning half way through, until tender.
  • While the sweet potato fries bake, combine the Greek yogurt, garlic, lemon juice, cucumber, and dill. Mix well and set aside.
  • Remove the fries from the oven. Drizzle with the cucumber yogurt mixture and top with the tomato, onion, and feta. Serve hot.
