Whip Up This Scrumptious Baked Oatmeal with Ingredients You Probably Already have On-Hand!

Ingredients

  • 1.5 cup quick or rolled oats
  • 1/2 cup coconut sugar optional: brown sugar or pure maple syrup
  • 1/2 cup unsweetened almond milk optional: coconut milk
  • 1/4 cup coconut oil
  • 1 large egg
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1.5 teaspoon vanilla extract
  • 1/2 cup dried cherries Use whatever add-ins you have on hand! (raisins, nuts, dried cranberries, etc)

Instructions

  • Preheat oven to 350 and spray a 10-inch casserole dish with nonstick spray.
  • Combine all of the ingredients in a large bowl.
  • Add any additional goodies you have on hand, like nuts, dried fruit, semi-sweet dark chocolate chips, etc., to the batter.
  • Spread batter into the casserole pan and bake for 25-30 minutes, or until oatmeal and lightly crisp and browned around the edges.
  • Serve with fresh berries, or heat up frozen berries for a delicious topping.

Notes

  • Feel free to use whatever add-ins you have on hand. Walnuts, chopped almonds, chopped peanuts, dried raisins, or dried cranberries make great options to this baked oatmeal! 
  • This dish is a casserole and has a much firmer consistency than a traditional bowl of oatmeal.
