Easiest Ever Oatmeal Cookie Recipe

Ingredients

  • 1.5 cups quick or rolled oats
  • 2 ripe bananas
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/3 cup semi-sweet chocolate chips Use raisins, chopped nuts, or whatever add ins you desire.

Instructions

  • Preheat oven to 350 F. Line a baking sheet with parchment (or use a nonstick cookie sheet).
  • Squish ripe bananas with a fork until you've achieved a creamy consistency.
  • Add oats, cinnamon, and vanilla and stir until ingredients are evenly combined.
  • Mix in semi-sweet chocolate chips, raisins, chopped nuts, or add-ins of your choice. Feel free to use more than one!
  • Roll generous spoonfuls of batter into 1-inch balls- about 8-10 balls total. Place each scoop a couple inches apart.
  • Bake cookies for 12-15 minutes, or until golden and lightly crisp. Enjoy!

Notes

Optional- add in whatever goodies you have on hand. Raisins, dried cherries, or chopped walnuts or almonds make great additions to these cookies!
