Ingredients

  • 12 Medjool Dates pitted
  • 1 large sweet potato baked and peeled
  • 1/4 cup almond butter
  • 1/2 cup oat flour optional almond flour
  • 1 teaspoon vanilla
  • 2/3 cup vegan chocolate chips
  • 3 tablespoons cocoa powder

Instructions

  • Preheat oven to 350 degrees.
  • Line small baking pan (1 1/2 - 2 quart) with parchment paper.
  • Add dates to a food processor. Mince dates and pulse until a ball forms.
  • Add remaining ingredients, including chocolate chips, and pluse until combined.
  • Spoon into baking dish and bake 25-30 minutes.
  • Cool completely before serving.

Notes

Recommend baking sweet potato in a 400 degree over for 45-50 minutes, or until tender.
