Cozy and Satisfying Moroccan Lentil Soup

  • 1 tablespoon olive oil
  • 1 onion small, diced
  • 2 garlic cloves minced
  • 1 sweet potato diced
  • 2 cups green lentils rinsed
  • 2 teaspoons ground cumin
  • 1/2 teaspoon ground cardamom
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground cloves
  • 6 cups vegetable broth
  • 1 tablespoon cilantro chopped


  • In a medium soup pot, heat olive oil. Once hot, add the onion and saute for 2 to 3 minutes or until softened. Add the garlic and sweet potato, cook for another 5 minutes or until just begin to soften.
  • Stir in lentils, cumin, cardamom, cinnamon, turmeric, salt, pepper, and cloves. Stir until the mixture become very fragrant, about 1 minute.
  • Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes or until lentils and potatoes are tender.
  • Ladle into bowls and sprinkle with fresh cilantro.
