White Bean Chili

Ingredients

  • 2 garlic cloves minced
  • 1/2 cup sweet onion diced
  • 1 1/2 pounds  boneless and skinless chicken breast cut into 1 inch pieces
  • 14 1/2 ounces diced tomatoes canned - with liquid
  • 2 tablespoons tomato paste
  • 1 1/4 cups chicken broth fat free, low sodium -optional vegetable broth
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • kosher or sea salt to taste
  • 31 ounces cannellini beans canned - drained and rinsed
  • 1/4 cup Greek yogurt plain fat free - for garnish

Instructions

  • Combine all the above ingredients in the slow cooker. Cover and cook on low 8 hours in a 4-6 quart slow cooker.
