Ingredients

  • 2 pounds heirloom tomatoes variety of shapes and colors
  • 2 cups arugula chopped
  • 1 vidalia or sweet onion, small, thinly sliced
  • 1 tablespoon fresh basil chopped
  • 1 tablespoon fresh mint chopped
  • 1 tablespoon fresh oregano chopped
  • 1 tablespoon fresh thyme chopped
  • sea salt and black pepper to taste
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons white balsamic vinegar
  • 2 tablespoons feta cheese crumbles

Instructions

  • Slice tomatoes, and place in a serving dish over arugula and onion. Sprinkle fresh herbs over tomatoes; salt and pepper to taste. Drizzle oil and vinegar over tomatoes; add feta crumbles.
