Ingredients

  • 1 jicama medium
  • 1 chayote squash
  • 2 carrots
  • 1/2 cup salsa no sugar added
  • 1 cup sweet potato crunchies recipe for sweet potato crunchies

Instructions

  • Peel all vegetables and dice. In a medium mixing bowl, toss vegetables to combine. Add 1/4 recipe to salad plate, top with 2 tablespoons salsa and 1/4 cup sweet potato crunchies.
