Southwest Grilled Chicken with Corn and Bean Relish

  • 4 boneless and skinless chicken breasts
  • 1/4 cup olive oil
  • 2 limes juiced
  • 1 garlic cloves minced
  • 1 teaspoon honey
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder


  • 1/2 cup black beans cooked
  • 1 tomato small, diced
  • 1/2 red onion small, diced
  • 1/2 cup corn kernels
  • 2 tablespoons cilantro fresh, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon sugar unrefined
  • 1 teaspoon white vinegar


  • Combine the chicken with the rest of the ingredients in a covered casserole dish or plastic bag and marinate in the refrigerator for 1 hour or overnight.
  • Make the relish by combining the ingredients in a large bowl. Refrigerate until ready to serve to let the flavors meld.
  • When you’re ready to eat, preheat grill to medium-high heat. Remove the relish from the refrigerator so it can come to room temperature while you’re grilling the chicken.
  • Grill the chicken until done. Allow to rest for about 5 minutes. Top with the relish.
