  • 2 eggs
  • 2 teaspoons brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • pinch kosher salt
  • 2 tablespoons coconut oil melted
  • 3/4 cup milk
  • 8 whole wheat bread slices 3/4-inch thick
  • cooking spray


  • Preheat the oven to 425 degrees Fahrenheit. Spray a rimmed baking sheet with cooking spray and set aside.
  • In a medium bowl, whisk the eggs, sugar, vanilla, cinnamon,and salt until the eggs are homogeneous and the sugar has dissolved. Add the melted coconut oil and milk to the bowl, whisking constantly as you add.
  • Pour the egg mixture into a shallow dish. Place the bread slices the egg mixture and let the slices sit for two minutes, flipping them over if necessary.
  • Transfer the soaked bread to the prepared baking sheet and bake for 10 to 15 minutes, until the French toast is golden brown and cooked through. If necessary, place the sheet under the broiler for a few minutes to crisp up the tops.
  • Serve the French toast with maple syrup or fresh fruit.
