Heat a large saucepan or Dutch oven to medium-high heat. Add the olive oil and the onions and cook until soft. Add the garlic and cook for 1 minute. Stir in the kale and the salt and pepper.
When the kale is soft, add the stock and beans and bring to a boil. Simmer for 10 minutes and stir in the lemon juice and zest. Simmer 5 more minutes, stir in the cheese and serve.
