Ingredients

  • 1 pound beef short ribs bone-in
  • 1 whole chicken small free-range (organic if possible)
  • 2 garlic cloves peeled
  • 1 onion chopped
  • 2 carrots chopped
  • 4 dill sprigs fresh
  • 4 celery stalks
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon peppercorns
  • 1 gallon water

Instructions

  • Place all ingredients in a large stockpot or slow cooker. Cover and boil on low for 24 hours, replace water as needed to keep the water level even throughout the cooking process. During the first 2-5 hours, skim off and discard any impurities or foam that rises to the top of the broth.
  • Remove and let cool, then strain through a fine metal strainer into a large bowl. Discard food particles and all bones or use chicken meat for other recipes.
  • Store in glass mason jars and use within 5 days, or freeze in ziplock freezer bags for up to 1 month.
