1/2cupGreek yogurt
1tablespoonextra virgin olive oil
1tomatomedium, finely chopped (optional for garnishing)
1onionsmall, finely chopped (optional for garnishing)
Instructions
Preheat the oven to 375 degrees F.
In a shallow bowl, combine the breadcrumbs, Parmesan, oregano, sea salt and pepper then set aside. Coat all the sides of the chicken with the yogurt.
Roll the chicken on the breadcrumb mixture and press lightly so that the coating will not fall off. Place the chicken on a non-stick or parchment-lined baking sheet. Drizzle the chicken some extra virgin olive oil.
Bake in the oven for 30 minutes or until the chicken turns golden. Garnish with the tomatoes and onions if using then serve immediately.
