Ingredients

  • 1 tablespoon extra virgin olive oil
  • 2 green bell peppers medium, sliced
  • 1 sweet onion medium, thinly sliced
  • 1/2 eggplant small, sliced
  • 2 whole-grain tortillas
  • 1/2 teaspoon kosher or sea salt
  • 2 tablespoons parmesan cheese grated
  • 2 dashes hot sauce

Instructions

  • In a medium skillet, heat olive oil over medium-low and add peppers, onions, and eggplant. Sauté about 10 minutes, or until browned.
  • Warm tortillas in a skillet over medium-high heat, about 30 seconds per side.
  • Evenly add veggies onto warm tortillas; add a dash of salt, parmesan, and a splash of hot sauce.
  • Wrap up and enjoy!
