For the Topping
1/4cupcheddar cheeselow-fat, shredded
1/2poundturkey baconcooked and crumbled
1jalapenothinly sliced into rounds
Instructions
Preheat oven to 400 degrees and place cauliflower on a large baking sheet. Drizzle cauliflower florets with oil and roast about 20 minutes, or until tender. Transfer to a colander and drain as much liquid as possible.
Combine the next 8 ingredients in a large bowl and use a hand mixer to mix until smooth.
Add in the cauliflower and chicken and mix with a spoon until all ingredients are well incorporated.
Taste the mixture for seasoning and transfer to a 2-qt casserole dish that has been lightly sprayed with cooking spray.
Top with the shredded cheddar, turkey bacon, and sliced jalapenos and bake for 25-30 minutes, or until bubbly.
