Preheat oven to 375 degrees. Spray a 9 x 13 inch casserole pan with nonstick spray.
Combine all ingredients and mix well until eggs are frothy and vegetables are well distributed. Pour into prepared pan and sprinkle the cheese on top. Bake for about 40 minutes until egg is set and lightly browned. If the top is beginning to brown too quickly, remove and cover with foil. Continue baking until set.
Allow to rest for 10 minutes before slicing and serving, enjoy!
