Ingredients

  • 2 sweet potatoes large, peeled and diced medium
  • 2 tablespoons olive oil
  • 2 garlic cloves minced
  • 2 teaspoons ground turmeric
  • 1 teaspoon ground cardamom
  • 1 tablespoon thyme leaves fresh

Instructions

  • Preheat oven to 400 degrees.
  • In a large bowl, combine all ingredients except the fresh thyme. Toss well to coat the potatoes in the seasonings and oil. Spread in an even layer on a baking sheet and bake for 30 to 40 minutes, stirring the potatoes about 1/2 way through.
  • Once tender, remove the potatoes from the oven and sprinkle with the fresh thyme. Serve and enjoy!
