Skinny Buffalo Chicken Tacos

These spicy tacos are made with clean and delicious ingredients.

Ingredients

For the Blue Cheese Dressing

  • 1/2 cup Greek yogurt plain
  • 1/4 cup blue cheese crumbles fat-free
  • 1 tablespoon lemon juice
  • 1 teaspoon red wine vinegar
  • 1/4 teaspoon kosher salt

For the Tacos

  • 15 ounces whole kernel corn can, low-sodium, drained
  • 18 to 24 ounces boneless and skinless chicken breasts cooked and shredded
  • 1/2 cup buffalo sauce low-sodium
  • 12 whole-wheat flour tortillas 8 inch
  • 4 cups romaine lettuce shredded
  • 1/4 cup cilantro fresh. chopped
  • 1 avocado peeled, pitted, and diced

Instructions

For the Blue Cheese Dressing

  • Combine all ingredients in a small bowl and set aside.

For the Tacos

  • In a bowl, combine the corn, chicken breast, and buffalo sauce. Mix well.
  • Place the tortillas on a flat surface. Place a small amount of the chicken mixture in the center of each. Top with romaine lettuce, fresh cilantro, and avocado. Drizzle with the blue cheese dressing.
