Ingredients

  • 4 peaches fresh, ripe, peeled, pit removed, diced small
  • 6 roma tomatoes diced small
  • 1/4 cup red onion diced small
  • 1 tablespoon lime juice
  • 1 jalapeno seeds removed and minced
  • 1/4 cup cilantro fresh, chopped
  • 1 teaspoon kosher salt

Instructions

  • Combine all ingredients together in a medium mixing bowl. Cover and refrigerate for at least 15 minutes before serving. Serve with your favorite tortilla or pita chips.

Notes

OPTIONAL TIP: Before cutting and peeling the peaches, cut them in half and remove the pit. Preheat a grill to high heat. Spray the cut side of the peach with not stick spray and place on the hot grill until lightly charred. Cool and dice, follow the recipe as directed.
