Chocolate Raspberry Truffles

Ingredients

Truffles

  • 1 cup raspberries frozen
  • 1 cup walnuts raw, unsalted
  • 1/2 cup coconut dessicated
  • 6 Medjool dates pitted
  • 3 tablespoon cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Outer Coating

  • 1/2 cup coconut desiccated
  • 3 tablespoon freeze-dried raspberries

Instructions

  • Combine the truffle ingredients in a food processor and blend until smooth.
  • Form into 1" balls and place on a lined baking tray.
  • Chill in the refrigerator for 15-30 minutes.
  • Meanwhile, combine outer coating ingredients in a food processor and pulse 2-3 times, or until the coconut turns pink.
  • Remove the truffles from the fridge and roll each of them in the outer coating to cover each ball.
  • Replace in the refrigerator and let chill for about 3 hours or until set.

Notes

Store in a closed container in the refrigerator for up to 4 days.
