Ingredients

  • 1/2 cup onion diced
  • 1 garlic clove minced
  • 15 ounces black beans can, rinsed and drained
  • 15 ounces kidney beans can, rinsed and drained
  • 4 1/2 ounces diced green chili peppers can
  • 14 1/2 ounces diced tomatoes can
  • 2 1/2 cups chicken broth low-sodium, fat-free (use more broth for a thinner soup)
  • 1 cup corn frozen or fresh
  • 1 lime juice
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne pepper more or less to taste
  • 1/2 teaspoon black pepper
  • kosher or sea salt to taste
  • 1/2 cup cilantro freshly chopped
  • 2 boneless and skinless chicken breasts cut into 1 to 2 inch cubes (no need to pre-cook)

Instructions

  • Add all ingredients to the slow cooker, stir to combine. Cover and cook on low 6-8 hours.
