Ingredients

  • 1 pound boneless and skinless chicken breasts
  • 1 yellow onion diced
  • 3 carrots peeled and diced
  • 3 celery stalks diced
  • 3 garlic cloves minced
  • 6 cups chicken broth low-sodium
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried sage
  • 2 cups brown rice cooked
  • 1/4 cup parsley leaves

Instructions

  • In a slow cooker, combine all ingredients except brown rice and parsley. Cook on high for 3 to 4 hours or on low for 5 to 6 hours.
  • Remove the chicken breast from the slow cooker and shred. Return the chicken to the slow cooker and stir in the cooked brown rice. Sprinkle the parsley over top and serve.
