Ingredients

  • 1 pound tomatoes
  • 2 cloves garlic
  • 2 yellow onions quartered
  • 1/4 cup basil plus 2 tbs, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1/4 cup light cream
  • 1/4 cup parmesan grated

Instructions

  • Preheat oven to 350 degrees F
  • Spread tomatoes, garlic, onion, and basil over a lined baking tray
  • Drizzle with olive oil and balsamic
  • Bake for 20 minutes
  • Once roasted, remove from oven and place into a food processor
  • Process until smooth
  • Pour into a saucepan over medium low heat and stir in light cream
  • Let simmer for 5 minutes
  • Top with parmesan and remaining basil
