Maple Pecan Fruit Tarts

Ingredients

Granola Tart Base

  • 1/2 cup cashew butter
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon pecans crushed
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/8 teaspoon sea salt
  • 1/2 cup puffed brown rice
  • 1/4 cup oat flour
  • 1/2 cup whole oats

Maple Fruit Filling

  • 3 apples cored and thinly sliced
  • 1 tablespoon brown sugar
  • 2 tablespoons maple syrup
  • 2 teaspoons lemon juice fresh
  • 1/4 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon

Topping

  • 1/4 cup pecans chopped
  • light whipped cream

Instructions

  • Gently combine the filling ingredients in a bowl and let chill.
  • For the tart, mix together the cashew butter, maple syrup, and vanilla extract in a medium bowl.
  • Add the pecans, cinnamon, nutmeg, salt, puffed rice, oats, and oat flour and mix well. Set aside for 5-10 minutes.
  • Press the dough into muffin tins, forming a little cup by pressing into the middle and keeping it higher on the sides.
  • Spoon the apple filling onto each tart.
  • Let chill, then gently remove from the muffin tin.
  • Top with a dollop of whipped cream and a sprinkle of toasted pecans.

Notes

Note: for a vegan option, omit the whipped topping.
