Ingredients

  • 1 pound chicken breast 4 fillets, boneless, skinless
  • 2 tablespoons butter unsalted, divided
  • 1 tablespoon lime juice
  • 1/2 teaspoon lime zest
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon thyme
  • 1 lime in wedges

Instructions

  • Melt 1 tablespoon of butter, then mix with the lime juice, zest, and seasonings.
  • Cover the chicken breast fillets with the spice mixture and let marinate for about half an hour.
  • Add the other tablespoon of butter to a cast iron skillet over medium-high heat. Add the chicken and cook for about 8 minutes or until fully cooked through and each side nice and dark.
  • Remove from heat, let rest for 5-10 minutes, and slice. Serve each fillet with a lime wedge and enjoy!
