Greek Roasted Potatoes


– yukon gold potatoes – sweet onion or yellow onion – oregano fresh – garlic – lemon zest – olive oil extra virgin – parsley


Arrange potatoes and onions on a rimmed baking sheet. Toss them with oregano, garlic, lemon zest, salt, pepper, and olive oil until they are evenly coated, then spread them out in a single layer on the baking sheet.


Roast the vegetables in the preheated oven for 30-40 minutes until they become tender and golden brown. After roasting, toss them with fresh parsley and serve.
