Loaded Baked Potato Salad

Ingredients

Baby potatoes Olive oil Apple cider vinegar Lemon juice Olive oil mayonnaise Greek yogurt Cheddar cheese Almonds

Cheese

STEP 1

Preheat oven to 400°F, place cleaned baby potatoes on baking sheet, let steam out, coat with olive oil, bake 45 minutes, until soft and easily pierced.

Let cool, then cut into quarters. Add the sliced potatoes to a large bowl, then drizzle apple cider vinegar over top and let sit.

Create dressing by mixing lemon juice, mayonnaise, Greek yogurt, salt, and pepper. Mix potatoes, dressing, radishes, onions, cheese, and almonds. Toss and serve over lettuce.
