Ingredients

  • 1 tablespoon coconut oil
  • 3 garlic cloves minced
  • 1 tablespoon ginger fresh, minced
  • 1 pound shrimp raw, peeled and deveined, tails on
  • 1/2 teaspoon crushed red pepper
  • 2 tablespoons lime juice
  • 1/2 teaspoon kosher salt

Instructions

  • In a large skillet, heat the coconut oil. Once hot, add the garlic and ginger. Cook just until fragrant, about 30 seconds. Add the shrimp, and cook until pink and firm. About 4 minutes. Stir in the red pepper, lime juice, and salt. Stir and simmer for about 30 seconds.
  • Serve hot over rice or quinoa.
