Banana Brulee Recipe with Vanilla Cream

Ingredients

Bananas Brulee:

  • 4 ripe medium bananas peeled and halved lengthwise
  • 1/4 cup coconut sugar

Vanilla Bean Cream:

  • 1/2 cup coconut cream
  • 2 teaspoons maple syrup
  • 1/2 teaspoon vanilla or vanilla bean paste

Instructions

Bananas Brulee:

  • Place banana halves cut side up on a heat-proof baking sheet.
  • Sprinkle with coconut sugar, coating completely,
  • Using a kitchen torch, heat sugar until "burnt" or caramelized. Allow to cool so sugar will harden.
  • Alternately, place under broiler in oven on high until sugar is caramelized. Watch carefully so the sugar doesn't burn too much. Remove from oven and allow to cool so sugar will harden.
  • Top with vanilla bean cream.

Vanilla Bean Cream:

  • Using a hand mixer, combine coconut cream, maple syrup, and vanilla/vanilla bean paste until thoroughly combined.

Assemble:

  • Place two banana halves on a plate and drizzle with vanilla bean cream.
  • Serve immediately.
