vanilla extract

Outer Coating
1/2
cup
coconut
desiccated

tablespoon
freeze-dried raspberries
Instructions
Combine the truffle ingredients in a food processor and blend until smooth.
Form into 1" balls and place on a lined baking tray.
Chill in the refrigerator for 15-30 minutes.
Meanwhile, combine outer coating ingredients in a food processor and pulse 2-3 times, or until the coconut turns pink.
Remove the truffles from the fridge and roll each of them in the outer coating to cover each ball.
Replace in the refrigerator and let chill for about 3 hours or until set.
Notes
Store in a closed container in the refrigerator for up to 4 days.
