Ingredients

  • 2 onions roughly chopped
  • 2 tablespoons olive oil
  • 3 cups zucchini roughly chopped
  • 1 pound broccoli roughly chopped
  • 1 pound kale rinsed and dried
  • 4 cups low-sodium vegetable broth
  • 1/2 cup parsley finely chopped, no stems
  • 1/2 cup cilantro finely chopped, no stems
  • 1/4 teaspoon salt
  • 1 lemon juice
  • 10 garlic cloves finely minced

Instructions

  • Press Sauté button on Instant Pot, add oil and chopped onions. Saute 5 minutes, until onions are soft and translucent.
  • Add zucchini, broccoli, and kale, stirring and sautéing for another five minutes. Color will deepen and the kale should slightly wilt.
  • Pour vegetable broth over vegetables and seal the Instant Pot. Set pressure on high setting and manual timer for 12 minutes.
  • When cooking is complete, allow pressure to naturally release for 5 minutes, then manually release until the pressure indicator drops. When the lid is removed, check to ensure that the broccoli and zucchini are fork tender. They should blend easily.
  • Add fresh herbs, salt, lemon juice, and garlic.
  • Working in batches, if necessary, blend until smooth in blender.

Notes

Three cups of zucchini is typically two medium or one large zucchini.
For kale and broccoli, the stems may be used, as the Instant Pot fully softens them in the cooking process.
This green instant pot detox soup recipe is forgiving with any kind of substitution. I’ve used spinach, asparagus, and even green cabbage with great success. Feel free to experiment with what’s in your refrigerator and enjoy the taste and health benefits.
If, upon opening the Instant Pot the zucchini, and broccoli are not tender enough, just saute in the IP for another five-ten minutes.
