Ingredients

  • 12 slices ham low-sodium, all-natural
  • 3 eggs
  • 3 egg whites
  • 1/2 cup skim milk
  • 2 green onions chopped

Instructions

  • Preheat oven to 350.
  • Lightly spray a muffin tin with non-stick spray. Press each ham slice into the muffin pan, creating a cup shape.
  • In a mixing bowl, whisk together the egg, egg whites, and milk. Stir in the green onion and pour into the ham cups until about 3/4 full.
  • Bake until eggs are completely set, about 20 minutes. Remove and allow to cool slightly before serving. Enjoy!
