Low-Carb Avocado Breakfast Cups

- 2 avocados halved, pits removed
- 4 eggs large
- 1/2 teaspoon sea salt
- 1/2 teaspoon ground black pepper
- 1/4 cup low fat shredded Mexican cheese
- 1/4 cup salsa
Preheat your oven to 450 °F
Line a small baking dish with baking paper
Scoop out a teaspoon or so of the flesh of each avocado half
Break each egg into the center of each avocado half
Sprinkle each egg with salt and pepper
Place into the baking dish and bake for 15 minutes or until the whites are set
Sprinkle with cheese when there is 1 minute left
Top with salsa
