Ingredients

  • 2 avocados halved, pits removed
  • 4 eggs large
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 1/4 cup low fat shredded Mexican cheese
  • 1/4 cup salsa

Instructions

  • Preheat your oven to 450 °F
  • Line a small baking dish with baking paper
  • Scoop out a teaspoon or so of the flesh of each avocado half
  • Break each egg into the center of each avocado half
  • Sprinkle each egg with salt and pepper
  • Place into the baking dish and bake for 15 minutes or until the whites are set
  • Sprinkle with cheese when there is 1 minute left
  • Top with salsa
