Maple Fruit Filling

apples
cored and thinly sliced

brown sugar

maple syrup

teaspoons
lemon juice
fresh

vanilla extract

Topping

pecans
chopped
light whipped cream
Instructions
Gently combine the filling ingredients in a bowl and let chill.
For the tart, mix together the cashew butter, maple syrup, and vanilla extract in a medium bowl.
Add the pecans, cinnamon, nutmeg, salt, puffed rice, oats, and oat flour and mix well. Set aside for 5-10 minutes.
Press the dough into muffin tins, forming a little cup by pressing into the middle and keeping it higher on the sides.
Spoon the apple filling onto each tart.
Let chill, then gently remove from the muffin tin.
Top with a dollop of whipped cream and a sprinkle of toasted pecans.
Notes
Note: for a vegan option, omit the whipped topping.
