One Pot Ground Beef Stroganoff

Ingredients

  • 1 pound lean ground beef
  • 1 yellow onion chopped
  • 3 garlic cloves minced
  • 1 tablespoon tomato paste
  • 2 teaspoons smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 1/2 teaspoon sea salt
  • 2 cups beef broth low sodium
  • 8 ounces egg noodles cooked
  • 1 cup sour cream low fat
  • 2 tablespoons fresh parsley chopped, for garnish

Instructions

  • Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes.
  • Add the chopped onion and garlic to the skillet with the beef and cook for 2-3 minutes or until softened.
  • Stir in the tomato paste, smoked paprika, thyme, salt, and pepper, and cook for 1-2 minutes until fragrant.
  • Pour in the beef broth and bring to a simmer.
  • Add the cooked egg noodles to the skillet and stir to combine with the beef mixture. Simmer for another 5-10 minutes or until the sauce has thickened slightly and the noodles have absorbed some of the liquid.
  • Remove the skillet from the heat and stir in the sour cream until well combined.
  • Garnish with fresh parsley, serve hot, and enjoy!
