Philly Cheesesteak Bell Pepper Boats

Made with traditional Philly cheesesteak ingredients, these bell pepper boats fit tons of great flavor into one little high protein, low carb package.

Ingredients

  • 3 green peppers medium or large
  • 1 tablespoon olive oil
  • 1 white onion chopped
  • 1/2 pound sirloin steak cooked, sliced very thinly
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup provolone cheese shredded
  • 1 tomato diced

Instructions

  • Remove seeds, core, and membrane from bell peppers then slice each one into 6 vertical pieces where they dip down. Set sliced bell peppers aside.
  • Heat olive oil in a pan over medium-high heat, then add the sliced onion. Saute until it’s softened and browned, around 5 minutes. Add the steak, salt, and pepper just to warm and combine flavors, about 1 minute. Remove from heat.
  • Preheat the oven to 375 degrees.
  • Evenly distribute the steak mixture into the bell pepper boats, then top with provolone cheese.
  • Bake on a parchment lined baking sheet for 10 minutes or until cheese is melted and peppers are hot.
  • Top with diced tomatoes and enjoy!
