Pulled BBQ Jackfruit Tacos with Citrus Corn Slaw

Ingredients

Pulled BBQ Jackfruit tacos

  • 2 teaspoons avocado oil
  • 16 ounces jackfruit drained and rinsed
  • 1/2 cup smoky bbq sauce
  • 1/4 teaspoon salt
  • 8 6-inch corn tortillas

Citrus corn slaw

  • 1 cup green cabbage shredded
  • 1 cup red cabbage shredded
  • 1 cup carrots peeled and shredded
  • 1/2 cup corn kernels frozen, thawed
  • 1/4 cup orange juice
  • 2 tablespoons orange zest
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/4 teaspoon salt

Instructions

  • Prepare the taco filling by placing 2 teaspoons avocado oil in a skillet over medium heat. Add drained and rinsed jackfruit and break apart with a spatula.
  • Stir in BBQ sauce and simmer with jackfruit for about 5-8 minutes until heated through.
  • Add salt to taste.
  • Prepare citrus corn slaw by adding all ingredients in a large mixing bowl. Toss to combine.
  • Add prepared jackfruit to warmed corn tortillas and top with citrus corn slaw.
