Pulled BBQ Jackfruit tacos
- 2 teaspoons avocado oil
- 16 ounces jackfruit drained and rinsed
- 1/2 cup smoky bbq sauce
- 1/4 teaspoon salt
- 8 6-inch corn tortillas
Citrus corn slaw
- 1 cup green cabbage shredded
- 1 cup red cabbage shredded
- 1 cup carrots peeled and shredded
- 1/2 cup corn kernels frozen, thawed
- 1/4 cup orange juice
- 2 tablespoons orange zest
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/4 teaspoon salt
Prepare the taco filling by placing 2 teaspoons avocado oil in a skillet over medium heat. Add drained and rinsed jackfruit and break apart with a spatula.
Stir in BBQ sauce and simmer with jackfruit for about 5-8 minutes until heated through.
Add salt to taste.
Prepare citrus corn slaw by adding all ingredients in a large mixing bowl. Toss to combine.
Add prepared jackfruit to warmed corn tortillas and top with citrus corn slaw.
