Simple Homemade Gnocchi

Our simple two-ingredient gnocchi recipe is made with pantry staples no matter what potatoes you have on hand!

Ingredients

  • 1 pound potatoes any kind or color!
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt

Instructions

  • Place potatoes in a large pot and cover with cold water
  • Bring to a boil over medium heat and cook for 15 minutes or until fork-tender.
  • Remove from heat, drain, and let cool.
  • Peel the potatoes and mash with a potato masher until smooth.
  • On a clean, flat surface, spread potato mash into a thin layer.
  • Top with flour and salt, use hands to combine into a ball of dough. Do not overknead.
  • Divide the ball of dough into 4 sections.
  • Cut the log into 1” pieces, then use a fork to make shallow grooves into your gnocchi pieces. Repeat this with the rest of the dough.
  • Boil a large pot of water with salt. Add gnocchi and cook for 4-5 minutes or until they float. Remove with a slotted spoon and serve with your desired sauce.

Notes

Optional:
  • 1 small egg, whipped
  • 1/4 cup grated cheese
  • 1/2 teaspoon herb of choice
Combine any or all of the above when mixing the potatoes, flour, and salt. Proceed with the instructions.
