Sweet Potato Black Bean Quinoa Bites

Ingredients

  • 2 cups quinoa cooked
  • 2 eggs beaten
  • 1 cup sweet potatoes mashed
  • 2 tablespoons cilantro fresh, chopped
  • 2 teaspoons garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 2 teaspoons chili powder
  • 1 teaspoon turmeric
  • 1/2 teaspoon kosher salt
  • 15 ounces black beans can, drained and rinsed

Instructions

  • Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
  • In a large bowl, combine all ingredients except for the black beans and mix well. Gently fold in the beans just until they're incorporated.
  • Gently form into patties, about 2 to 3 tablespoons per patty, and place on the parchment-lined baking sheet. Bake for 15 to 20 minutes or until cooked through and just beginning to brown. Serve hot or cold if a more firm patty is desired.

Notes

TIP (optional): Serve with a spicy yogurt dip, fresh pico de gallo, or guacamole!
